Vegetarian recipe sample: easy zucchini stew

It’s true that you don’t always have to thicken your stew with flour…

Grate tender zucchini on a large grater, season lightly with salt and set aside. Chop the capers and set aside. Once the courgettes have drained, squeeze out the juice and sauté in a little olive oil under a lid with a pinch of salt and pepper. When almost done, sprinkle over the capers. Mix the sauce with skimmed cream (or almond milk) and 1 gram of starch, pour over and bring to the boil.
